Fresh Tomato Bruschetta
- 2 whole Tomatoes, Ripe
- 1/2 whole White Onion, Diced
- 3 cloves Garlic, Crushed
- 1/2 teaspoons Rosemary
- 1 teaspoon Basil
- 1 bunch Fresh Chopped Parsley
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Fresh Black Pepper
- 2 Tablespoons Olive Oil, Divided
- 1 whole Baguette, Sliced
- 1/2 cups Fresh Grated Parmesan Cheese
- In a bowl, combine tomatoes, onion, garlic, rosemary, basil, parsley, salt, pepper and 1 tablespoon of the olive oil.
- Stir to combine and set aside.
- In a large skillet, heat the remaining olive oil over medium heat.
- Add bread slices (in batches if necessary) and cook each side until slightly crisp, about 2 minutes per side.
- Remove from skillet and arrange bread slices on a large baking tray.
- Top each piece of bread with tomato mixture and garnish with fresh Parmesan.
- Put under a hot grill in the oven for just a couple of minutes until cheese is melted.
- Serve straight away.
