Fresh Tomato Bruschetta

  1. In a bowl, combine tomatoes, onion, garlic, rosemary, basil, parsley, salt, pepper and 1 tablespoon of the olive oil.
  2. Stir to combine and set aside.
  3. In a large skillet, heat the remaining olive oil over medium heat.
  4. Add bread slices (in batches if necessary) and cook each side until slightly crisp, about 2 minutes per side.
  5. Remove from skillet and arrange bread slices on a large baking tray.
  6. Top each piece of bread with tomato mixture and garnish with fresh Parmesan.
  7. Put under a hot grill in the oven for just a couple of minutes until cheese is melted.
  8. Serve straight away.
