Spicy Easy Stovetop Mac and Cheese
- 1 pound pasta, any kind
- 4 tablespoons unsalted butter
- 2 cups milk
- 3 eggs, beaten
- 20 ounces (1 pound 4 ounces) grated sharp cheddar
- 1-2 fresh jalapenos, or to taste, seeded and sliced
- 1 teaspoon Kosher or sea salt, or to taste
- 1/2 teaspoon ground chipotle
- 1/2 teaspoon ground mustard
- 1/4 teaspoon ground smoked paprika
- Fresh cracked black pepper, to taste
- Chopped cilantro, for garnish
- Cook the pasta in a large pot of boiling, salted water until it is al dente, according to package instructions.
- Drain and rinse under cold water until it is completely cooled.
- Set aside.
- Melt the butter in a large pot over medium heat.
- Whisk in the milk, eggs, cheese, jalapenos, salt, chipotle, ground mustard, paprika and black pepper.
- Continue to stir until the cheese is completely melted, and then cook for another 2 to 3 minutes until the sauce thickens slightly.
- Add the pasta to the cheese sauce and cook for another minute or until the pasta is heated through.
- Serve warm garnished with cilantro.
