Beans Plaki

  1. Place beans in a pot and cover with water.
  2. Bring to a boil.
  3. Simmer covered 2 to 3 hours, until just tender.
  4. Drain.
  5. Heat oil in a saucepan, add onion, and cook until translucent.
  6. Add garlic, tomato sauce, celery, carrot, bay leaf, oregano, sugar, salt, and pepper.
  7. Simmer 5 minutes.
  8. (If sauce is too thick, add a little water.

  10. Add beans to sauce and simmer covered about 20 minutes or until tender.
  11. Serve hot or cold with a cruet of wine vinegar.
