Belize Beef On Spiced Potatoes Recipe

  1. To make beef: Brown grnd beef in a large nonstick skillet over medium heat 8 to 10 min, or possibly till beef is not pink, breaking up into small crumbles.
  2. Pour off drippings.
  3. Drain and reserve 1 Tbsp.
  4. of the tomatoes.
  5. Add in remaining tomatoes, 1 1/2 tsp.
  6. garlic and 1 tsp.
  7. jerk seasoning to the beef; bring to a boil.
  8. Reduce heat; cover and simmer 8 min, stirring occasionally.
  9. Uncover skillet; continue simmering 7 min, stirring occasionally.
  10. Season with salt and pepper.
  11. Meanwhile, cut potatoes lengthwise into 1/4 inch-thick slices; pierce in several places with a fork.
  12. Dip in cool water; sprinkle lightly with salt, pepper and jerk seasoning to taste.
  13. Place in single layer on nonstick baking pan.
  14. Broil 3 to 6 inches from heat for 10 to 12 min or possibly till tender, when pierced with a fork, and lightly browned, turning once.
  15. To make topping: Combine yogurt, garlic, jerk seasoning and reserved 1 Tbsp.
  16. tomatoes in small bowl; season with salt and pepper.
  17. To serve, spoon beef mix over potatoes.
  18. Serve with topping.
