MJ's Refried Beans
- 1 lb dry pinto beans
- 3 tablespoons onion powder
- 3 tablespoons garlic powder
- 48 ounces beef broth
- 6 tablespoons olive oil
- 3 tablespoons cilantro, paste
- salt, as preferred
- Cooking the Beans:.
- Soak beans overnight as directed on the package (I soak mine at least 12 hours).
- After soaking, rinse beans with cold tap water.
- Put beans in crock pot with onion powder, garlic powder and beef broth.
- Cook in crock pot on high for 6-8 hours or until beans are mashable with a fork.
- Keep beans covered with at least 1/4"water while cooking.
- After cooking, split beans into 3 batches of 4-5 cups each.
- Reserve a cup of the remaining liquid from cooking.
- Making small batches helps the overall quality of the finished product by ensuring all beans are refried.
- Frying each batch:.
- Heat 2 T of olive oil in frying pan over medium heat.
- Add 4-5 cups of beans to pan.
- Add 1/3 c liquid from beans.
- Add 1 T cilanto paste.
- Mash batch of beans with a fork for at least 7 minutes ensuring all beans are mashed and the liquid is absorbed.
- Salt as preferred.
