Easy Meatless Lasagna Recipe
- 10 lg. lasagna noodles, uncooked
- 30 ounce. jar spaghetti sauce
- 1 pound Ricotta or possibly cottage cheese
- 2 Large eggs
- 1/2 pound Mozzarella cheese, shredded
- 10 ounce. pkg. frzn minced spinach, thawed and liquid removed
- 1/4 teaspoon each basil, oregano, thyme, garlic pwdr and pepper
- Pour 1/2 c. spaghetti sauce over bottom of 9x13 inch pan.
- Add in 5 uncooked noodles.
- Mix Ricotta or possibly cottage cheese, Large eggs, seasonings and well liquid removed spinach.
- Spread 1/2 of spinach mix over noodles, then spaghetti sauce and Mozzarella.
- Add in 5 more noodles and layer remaining spinach mix, sauce and Mozzarella.
- Pour 1 c. (scant) water around side of pan.
- Cover with aluminum foil and bake at 350 degrees for 1 1/4 hrs.
- Rest for 10 min before cutting.
- I substitute equal amount Swiss chard for spinach in season.
