Santa Fe Calabacitas
- 3 ears Corn, Cut Off The Cob
- 1 whole Large Yellow Squash
- 1 whole Large Zucchini
- 1/2 cups Diced Green Chile Or Bell Pepper
- 1/2 cups Diced White Or Yellow Onion
- 1 Tablespoon Oil
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder
- Cut the corn off the cob.
- Dice the squash, zucchini, pepper, and onion.
- In a large skillet place the oil and all your chopped ingredients.
- Add salt and garlic to taste.
- Cook uncovered until squash is tender.
- Serve warm.
