Santa Fe Calabacitas

  1. Cut the corn off the cob.
  2. Dice the squash, zucchini, pepper, and onion.
  3. In a large skillet place the oil and all your chopped ingredients.
  4. Add salt and garlic to taste.
  5. Cook uncovered until squash is tender.
  6. Serve warm.
