sig's Asparagus, Zucchini and smoked Garlic soup with a hint of Chilli
- 1 tbsp butter
- 2 tbsp olive oil
- 1 medium onion
- 3 clove smoked garlic
- 3 tbsp plain flour
- 1 dried chilli, de-seeded, chopped finely
- 2 can of green asparagus, about 900 grams in total , drained (reserve the water)or use 1 kg fresh asparagus slowly cooked until tender
- 500 grams zucchini, thinly sliced, saute gently in butter, do not peel
- 1 can water or some of the boiling water from asparagus
- 1 cup water (optional)
- 1 vegetable stock cube
- 1 pinch salt to season
- heat the butter and olive oil in a pan, chop the onions, the chopped garlic and half of the de-seeded chilli ,heat until soft but not browned
- saute the zucchini until soft but not browned, add both the canned asparagus (keeping the juice from the cans aside )and the zucchini to the onion and butter ,add the flour and cook for two minutes .
- Add the juices and the stock cube.
- Blend until very smooth , if needed add a little extra water until consistency that you prefer is reached.
- season with salt if needed.
- I garnished with bits of chives and small bits of dried chilli
