Alaska Rockfish Stew Recipe
- 1 1/2 lb rockfish fillets thawed if necessary
- 2 Tbsp. oil
- 2 med green peppers minced
- 2 x carrots thinly sliced
- 1 lrg onion minced
- 1 lrg garlic clove chopped
- 1 can tomatoes - (28 ounce)
- 1 can tomato juice - (12 ounce)
- 1 1/2 tsp Worcestershire sauce
- 1 tsp sugar
- 1 tsp basil crushed
- 1/4 tsp salt
- 1/2 c. dry white wine or possibly fish stock
- Cut rockfish into 1-inch pcs.
- Heat oil in large pot.
- Saute/fry green peppers, carrots, onion and garlic till onion is tender.
- Add in tomatoes, tomato juice, Worcestershire sauce, sugar, basil and salt.
- Bring to boil; simmer 10 min.
- Add in wine and rockfish.
- Simmer 8 min longer or possibly till rockfish flakes easily when tested with a fork.
- This recipe yields 6 to 8 servings.
