Strawberry Lemon Marmalade

  1. Place lemon peel and pulp in a pot with just enough water to cover.
  2. Bring to a boil and simmer 5 minutes.
  3. Turn off heat then cover with a lid and let sit for 12 to 18 hours.
  4. Drain water.
  5. Combine lemon peel and pulp, strawberries, pectin, and lemon juice in a large pot.
  6. Bring to a boil.
  7. Add sugar, stirring until dissolved.
  8. Bring to a rolling boil.
  9. Boil hard 1 minute, stirring constantly.
  10. Remove from heat.
  11. Skim foam if necessary.
  12. (I add a bit of butter to
  13. prevent foam.)
  14. Ladle hot marmalade into jars, leaving a 1/4 inch
  15. headspace.
  16. Process jars in a boiling water bath for 10 minutes.
  17. Adjust time according to your altitude.
  18. Makes: 9 half pints.
