Apple Prosciutto Chicken Recipe

  1. Rinse chicken, pat dry.
  2. Place each breast half between 2 pcs of plastic wrap.
  3. Lb.
  4. from the center to the edges with the flat side of a meat mallet until 1/4 inch thick.
  5. Remove plastic wrap.
  6. Place one prosciutto slice atop each breast half.
  7. Combine apple and 1/8 tsp.
  8. pie spice.
  9. Place a fourth of the apple mix on each breast.
  10. Mix in sides and roll up each half starting from a narrow end.
  11. Secure with wooden toothpicks.
  12. Sprinkle with additional apple pie spice.
  13. Place in a 10x6x2 inch baking dish.
  14. Bake, uncovered, in a 350 degree oven for 25 to 30 min till tender and no longer pink.
  15. Remove picks.
  16. In a small saucepan cook onion in margarine till tender.
  17. Stir in flour and dash pepper.
  18. Add in lowfat milk.
  19. Cook and stir until thickened and bubbly; cook and stir 1 minute more.
  20. Stir in cheese until melted.
  21. Serve sauce over chicken rolls.
  22. Serve with rice or possibly on a bed of rice, if you like.
