Greek-Style Burrito

  1. Place rice and 1 1/3 cup water in medium saucepan.
  2. Cover and bring to a boil.
  3. Reduce heat to low and simmer for 14 minutes.
  4. Do not stir or lift cover.
  5. Remove from heat and let steam, covered for an additional 10 minutes.
  6. Meanwhile, brown beef and garlic in a large, non-stick skillet over medium-high heat.
  7. Drain on paper towels to remove all fat.
  8. You may use a mesh strainer, as I do.
  9. Return meat/garlic mixture to skillet and add mint, oregano, cumin and salt.
  10. Cook over medium heat 1 minute, stirring constantly.
  11. Remove from heat.
  12. Add the yogurt and the cooked rice, mixing well.
  13. Spoon onto center of warm tortilla, top with lettuce and roll up.
  14. Note: you can warm the tortillas in the microwave oven.
  15. Lay them flat and heat them at medium power for 45-50 seconds.
  16. Check about half-way through, and be sure not to over-heat them.
  17. All microwave ovens heat differently.
  18. You can also warm them in the oven at 250 by wrapping them in aluminum
  19. foil and heat in 250 oven for 10 minutes.
