Sweet Berry Mousse

  1. Blend berries, tofu and Grand Marnier in food processor till smooth.
  2. Combine sugar, soy milk and gelatine in saucepan.
  3. Stir over low heat till gelatine dissolves.
  4. Remove from heat and cool for 5 minutes.
  5. Blend the 2 mixtures till well combined.
  6. Pour into 4 lightly oiled ramekins.
  7. Refrigerate for 2 hours or until firm.
  8. Turn out onto serving plates.
  9. Top with fresh fruit if desired.
