Rich Yet Refreshing! Simple No-Bake (Rare) Cheesecake
- 200 grams Cream cheese
- 200 grams Plain yogurt
- 40 ml Coffee cream
- 70 grams Sugar
- 2 1/2 tbsp Lemon juice (you can use concentrate)
- 5 grams Powdered gelatin
- 3 tbsp Hot water (to soak the gelatin)
- 10 Plain cookies (Marie Biscuits)
- 35 grams Butter
- 1 1/2 tbsp Granulated sugar
- Break up the ingredients for the base finely in a plastic bag.
- Do this until the mixture is moist.
- Tip: Return the butter to room temperature before you add it!
- Press the base mixture firmly into the bottom of the mold.
- Chill in the refrigerator.
- Put the cream cheese in a bowl, warm for about 30 seconds in the microwave, and stir.
- Add the yogurt and coffee cream, and stir some more.
- Add the sugar in 2-3 batches to the Step 3 bowl.
- Add the lemon juice and mix.
- Heat the soaked gelatin over a hot water bath until it's liquid.
- Mix this rapidy into the Step 4 mixture, and pour into the chilled mold from Step 2.
- Refrigerate for 2-3 hours and it's done.
- Be careful when removing the cake from the mold!
- This is delicious eaten topped with blueberry or raspberry sauce!
