Bodacious Chili
- 2 pounds beef chuck roast
- 2 large onions chopped
- 3 each celery sliced
- 1 large green bell peppers chopped
- 1 large sweet red bell peppers chopped
- 1 cup mushrooms sliced
- 2 each jalapeno pepper
- 4 cloves garlic minced
- 3 tablespoons olive oil
- 2 tablespoons cocoa powder
- 2 tablespoons chili powder
- 1 teaspoon cumin ground
- 1 teaspoon oregano dried
- 1 teaspoon paprika
- 1 teaspoon turmeric ground
- 1/2 teaspoon salt
- 1/2 teaspoon cardamom seeds ground
- 1/4 teaspoon black pepper
- 1 tablespoon molasses
- 1/2 cup burgundy wine
- 2 cans red kidney beans
- 1 can chickpeas (garbanzo beans)
- Cook first 8 ingredients in olive oil in a large Dutch oven over medium-high heat, stirring constantly, until meat browns.
- Drain and return meat mixture to Dutch oven.
- Stir in cocoa and next 13 ingredients.
- Bring mixture to a boil; cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally.
