Chinese Rice Salad

  1. Cook rice according to pack instructions.
  2. Cool.
  3. Combine cooked rice, spring onions, capsicum, bok choy, corn, water chestnut and ginger in a large bowl.
  4. Add dressing and toss to coat.
  5. Serve topped with cashews.
