Chinese Rice Salad
- 1 cup short grain rice
- 4 spring onions, sliced on the diagonal
- 1 red capsicum, sliced
- 1 bunch baby bok choy, leaves halved lengthways, blanched Safeway 1 lb For $1.28 thru 02/09
- 425g can whole baby corn, drained
- 230g can water chestnuts, drained and sliced
- 1 teaspoon finely chopped root ginger
- 1/2 cup KRAFT FREE Honey Soy Dressing
- 1/2 cup roasted cashew nuts
- Cook rice according to pack instructions.
- Cool.
- Combine cooked rice, spring onions, capsicum, bok choy, corn, water chestnut and ginger in a large bowl.
- Add dressing and toss to coat.
- Serve topped with cashews.
