Plum and Ginger Fool

  1. Mix together the Philly*, cream and sugar, then gently fold through the plum puree to form a swirl effect.
  2. Do not mix through thoroughly.
  3. Sprinkle half the gingernuts into the base of 6 latte glasses or serving dishes.
  4. Top with half of the Philly* and plum mixture, then another layer of biscuits and Philly*.
  5. Sprinkle with the cinnamon and chill for 3 hours or until the biscuits soften.
