Plum and Ginger Fool
- 250g PHILADELPHIA Spreadable Cream Cheese
- 3/4 cup cream
- 2 1/2 tablespoons sugar
- 16 gingernut biscuits, roughly chopped
- 825g can dark plums, stones removed and pureed
- cinnamon for dusting
- Mix together the Philly*, cream and sugar, then gently fold through the plum puree to form a swirl effect.
- Do not mix through thoroughly.
- Sprinkle half the gingernuts into the base of 6 latte glasses or serving dishes.
- Top with half of the Philly* and plum mixture, then another layer of biscuits and Philly*.
- Sprinkle with the cinnamon and chill for 3 hours or until the biscuits soften.
