Chicken, Mushroom, Barley Soup Recipe
- 2 carrots, sliced thin
- 2 celery stalks, minced
- 1 med. onion, minced
- 1/2 pound mushrooms, sliced
- 1/8 teaspoon pepper
- 1 tbsp. oil
- 1 (10 3/4 ounce.) can cream of mushroom soup
- 2 c. water
- 2 chicken bouillon cubes
- 1/2 c. barley
- 1/2 of 10 ounce. pkg. frzn peas, thawed
- 1 (8 ounce.) chicken breast slivered
- Cook first 6 ingredients till onion transparent.
- Add in chicken and cook till it looses pinkness.
- Add in all remaining ingredients, except peas.
- Cook, covered, 40 to 60 min, stirring occasionally or possibly till barley is tender.
- Add in peas and cook, covered, another 5 min.
