Chocolate Mousse

  1. Dissolve coffee creamer in hot water and mix until all is dissolved.
  2. In a mixing bowl put yogurt, cocoa, Equal and Vanilla.
  3. Beat at medium speed with a mixer for 40 seconds.
  4. Add coffee creamer/water mix.
  5. Beat at high speed for 4 minutes, scraping sides of the bowl with a spatula.
  6. Place in refrigerator and chill for several hours.
  7. Serve with a sprig of mint.
