A Hamburger Chef Teaches You How to Pan-Fry Hamburgers

  4. Toss the patties back and forth like playing catch to remove the air.
  5. Here are the hamburger patties with shiso leaves
  6. Start frying them!!
  7. Heat oil in a frying pan, and pan-fry for 3 minutes over medium heat.
  8. Please make an indentation in the middle with your fingers!
  9. That helps them cook through faster!
  10. Flip after 3 minutes!
  11. They should be nicely browned!
  12. Cover with a lid and steam-fry for 3 minutes!
  13. Flip after 3 minutes, and fry for another 3 minutes over low heat.
  14. Flip again after 3 minutes!
  15. Turn up the heat to high, and flambe with the sake!
  16. Cover with the lid and steam-fry!
  17. If you are worried whether they are cooked though or not, add water and steam-fry some more!
  18. And you're done!
  19. You'll be amazed how soft they are!
