Bread For All Seasons(Like A Cake)
- 3/4 c. whole wheat flour (can substitute white)
- 3/4 c. all-purpose flour
- 3/4 c. sugar
- 1/2 c. brown sugar
- 2 tsp. cinnamon
- 1 1/4 tsp. soda
- 1/2 tsp. salt
- 3 eggs
- 3/4 c. vegetable oil
- 1 1/2 tsp. vanilla
- 2 c. grated carrot, apple or zucchini, drained
- 3/4 c. semi-sweet mini chocolate chips
- 1/2 c. chopped walnuts
- Preheat oven to 350u0b0.
- Combine flours, sugars, cinnamon, soda and salt in large bowl.
- Beat eggs, oil and vanilla in small bowl; add to dry ingredients and blend.
- Stir in carrots, apple or zucchini, chips and walnuts.
- Pour into greased and floured 6-cup or 8-cup bundt pan.
- Bake 45 to 50 minutes.
- Cool 30 minutes; remove from pan.
- If desired, spread with Cream Cheese Glaze.
