Gluten-Free Banana Muffins/Banana Bread

  1. NOTE: The Gluten Free flour mixture makes more than the 1 1/2 Cups you need for this recipe so dont just add the entire batch of flour mix ingredients to your wet ingredients!!
  2. Combine all of the flour mix ingredients, set 1 1 /2 cups aside for the bread; and store the rest in an airtight container for another recipe.
  3. Preheat oven to 350F.
  4. Combine dry ingredients (1 1/2 cups of the flour mixture, baking powder, baking soda, salt, allspice, cinnamon).
  5. In a separate bowl, combine wet ingredients (bananas, butter, egg) and the sugar.
  6. Mix dry ingredients into wet.
  7. Add nuts or chocolate chips or any other optional ingredient.
  8. I typically get 6 jumbo muffins from this recipe and bake them for 30 minutes.
  9. If you are making a loaf of bread, it may require more baking time.
  10. If you are making mini muffins, theyll need to bake for 10-15 minutes.
  11. Regular sized muffins will take approximately 20 minutes.
