Roasted Butternut Squash

  1. Preheat oven to 400
  2. Peel and seed Squash and cut into 1 inch chunks.
  3. Place Squash on a large non stick sheet pan.
  4. In a small bowl melt butter in microwave about 20-30 seconds.
  5. Add brown sugar to melted butter and blend well.
  6. Pour butter brown sugar mixture over Squash.
  7. Give squash a toss so to evenly coat.
  8. Salt and pepper and toss again.
  9. Roast squash in the oven for 25-30 minutes turning once in between cooking time.
