Creamy Quick Veggie Pasta Recipe

  1. -cook pasta follow box directions (usually 8-11min)
  2. -chop carrots,pepper, and green onions to bite size portions
  3. -dice garlic
  4. -cook garlic in oil for 1 min
  5. -add carrots and 1/4 cup veggie stock
  6. when carrots are tender about 4min add bell pepper and tomatoes and 1/4 veggie stock
  7. -YOUR PASTA MIGHT BE DONE BY NOW drain it.
  8. keep it al dente baby!
  9. -ok tricky part...add rest of stock, onions, pepper spice.
  10. incorporate tomato paste and cream.
  11. mix it so its looking like a sauce and thickening up.
  12. add some cheese and stir.
  13. if you add all the cheese at once you'll get clumps.
  14. this process takes 3-4 min.
  15. dont worry this is dummy proof if you cook it longer the veggies get a little too overcooked
  16. and the sauce a little too thick.
  17. don't worry if the sauce gets too thick add more stock.
  18. -combine pasta
  19. -salt to taste and serve
