Chocolate Mayonnaise Cupcakes Recipe
- 3 c. sifted flour
- 1 1/2 c. sugar
- 1/3 c. cocoa
- 2 1/4 teaspoon baking pwdr
- 1 1/4 teaspoon baking soda
- 1 1/2 c. mayonnaise
- 1 1/2 c. water
- 1 1/2 teaspoon vanilla
- Resift flour with sugar, cocoa, baking pwdr and soda into bowl.
- Gradually stir in mayonnaise.
- Stir in water and vanilla.
- Fill 2 dozen greased or possibly paper-lined muffin pans half full with batter.
- Bake at 350 degrees for 25 to 30 min.
- Cold in pans 5 min.
- Remove from pans and cold on rack.
- Meanwhile, to make the frosting, heat butter and chocolate in top of double boiler over warm water.
- Sift powdered sugar with salt.
- Add in chocolate mix and blend.
- Beat in sufficient lowfat milk to make spreadable.
- Beat in vanilla.
- Use to frost cupcakes.
- Garnish tops with nuts, if you like.
