Feta Cheese Squares
- 2 cups baking mix
- 1 12 teaspoons baking powder
- 14 teaspoon salt
- 1 cup milk
- 12 cup butter, melted
- 4 (4 ounce) packages feta cheese with garlic and herbs, crumbled
- 1 (8 ounce) container cottage cheese
- 3 large eggs, beaten
- Preheat oven to 350 degrees.
- Stir together baking mix, baking powder, and salt in a large bowl.
- Stir in milk and remaining ingredients, stirring just until dry ingredients are moistened.
- Spoon mixture into a lightly greased 15x10" jellyroll pan.
- Bake for 30 minutes or until golden brown and set.
- Remove from oven and allow to cool on a wire rack for 10 minutes.
- Cut into 1 1/2" squares and serve immediately.
- Bake up to 1 month ahead and freeze in an airthigh container ot zip-lock plastic freezer bag.
- Preheat oven to 350 degrees and bake frozen squarea on a baking sheet for 10-15 minutes or until thoroughly heated.
