Roasted Red Pepper & Bacon Sauce
- 1 1/2 cups sweet red bell peppers, roasted drained and rinsed
- 14 1/2 ounces tomatoes, canned diced
- 1 teaspoon oregano dried
- 1/4 teaspoon cayenne pepper
- 2 tablespoons red wine
- 2 tablespoons olive oil
- 6 slices bacon chopped
- 1/2 medium onions finely chopped
- 2 cloves garlic minced
- 1 cup heavy whipping cream
- 1 x salt and black pepper
- 1 pound pasta
- Add the roasted peppers, tomatoes, oregano, cayenne, wine, and oil into a food processor or blender and process until smooth.
- Cook the bacon in large skillet over medium heat until crisp, about 8 minutes.
- Transfer bacon to plate lined with paper toweling.
- Pour off all but 2 teaspoons fat from pan and return to medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Add garlic and cook until fragrant, about 30 seconds.
- Add red pepper mixture to skillet and bring to simmer.
- Reduce heat, cover, and simmer until flavors combine, 10 to 15 minutes.
- Meanwhile, cook your favorite pasta (spaghetti works well with this recipe) according the the package directions in salted water.
- Remove from heat and stir in cream and half the bacon.
- Taste and adjust the seasoning with salt (if needed) and black pepper to taste.
- Toss the sauce with cooked pasta and serve.
- Top each serving with the remaining bacon.
