Roasted Red Pepper & Bacon Sauce

  1. Add the roasted peppers, tomatoes, oregano, cayenne, wine, and oil into a food processor or blender and process until smooth.
  2. Cook the bacon in large skillet over medium heat until crisp, about 8 minutes.
  3. Transfer bacon to plate lined with paper toweling.
  4. Pour off all but 2 teaspoons fat from pan and return to medium heat.
  5. Add the onion and cook until softened, about 5 minutes.
  6. Add garlic and cook until fragrant, about 30 seconds.
  7. Add red pepper mixture to skillet and bring to simmer.
  8. Reduce heat, cover, and simmer until flavors combine, 10 to 15 minutes.
  9. Meanwhile, cook your favorite pasta (spaghetti works well with this recipe) according the the package directions in salted water.
  10. Remove from heat and stir in cream and half the bacon.
  11. Taste and adjust the seasoning with salt (if needed) and black pepper to taste.
  12. Toss the sauce with cooked pasta and serve.
  13. Top each serving with the remaining bacon.
