Summer Zucchini Dinner
- 1 Tablespoon Extra Virgin Olive Oil
- 1 pound Boneless, Skinless Chicken Breast, Cut In Thin Strips
- 2 cloves Garlic, Minced
- 2 whole Zucchini, Sliced 1/4 Inch Thick
- 1/2 whole Onion, Cut In Thick Chunks
- 1 can Italian Style Tomatoes
- Salt
- Pepper
- Italian Herbs (oregano, Thyme, Basil, Etc.)
- Brown Rice, Cooked
- Parmesan Cheese
- 1.
- Heat olive oil in large frying pan over medium-high heat.
- 2.
- Saute chicken and garlic in olive oil until no longer pink.
- 3.
- Reduce heat to low.
- 4.
- Add zucchini, onion, tomatoes, salt, pepper, and Italian herbs to pan.
- 5.
- Simmer for 30 minutes or until zucchini is tender.
- Stir occasionally.
- 6.
- Serve over brown rice.
- 7.
- Top with Parmesan cheese.
- *Add your fresh garden herbs and tomatoes in place of preserved items.
- Adding fresh tomatoes may increase cooking times.
