Lu's stew (crock pot)
- 2 lb beef, cut into cubes
- 1/2 cup all-purpose flour
- pinch salt and pepper
- 1 tbsp olive oil
- 4 potatoes, cubed
- 3 carrots, cut into chunks
- 2 stalks celery, sliced into 2" pieces
- 1 onion, quartered
- 2 cup water
- 2 beef bouillon cube
- 2 can 6 ounces - tomato paste
- 1/2 cup Red wine
- 1 shallot, minced
- 2 bay leaves
- 2 tbsp worcestershire sauce
- Heat oil in large saute pan.
- Meanwhile, combine flour, salt, and pepper.
- Toss meat in flour mixutre, then brown on all sides in oil.
- Spray crock pot with non stick cooking spray.
- Place potatoes, carrots, and celery in bottom of pot.
- When meat is browned on all sides, place it on top of the vegetables.
- Place the onion with the meat.
- Add remaining to saute pan and heat until bubbling.
- Pour into crockpot and cook on low 7-9 hours.
- Remove bay leaves and stir before serving.
