Creamy Sweet Potato Soup

  1. Heat oil in a pot over medium-high heat.
  2. Add onions and saute for 2 minutes or until beginning to soften.
  3. Add carrots and sweet potatoes and saute for 5 minutes more.
  4. Add ginger, cumin, coriander seeds, and curry paste and saute for 1 minute or until fragrant.
  5. Add chicken stock and coconut milk and bring to a boil.
  6. Cover, turn heat to low and simmer for 18-20 minutes or until vegetables are very soft.
  7. Puree with an immersion blender, food processor or blender until smooth.
  8. Season with salt and pepper, and season with lemon juice and coriander.
