Sirloin with Roasted Sweet Potatoes, Peppers, and Shiitakes

  1. Heat the oven to 450.
  2. In a large roasting pan, combine the vegetables and 4 tablespoons of the oil.
  3. Add 3/4 teaspoon of the salt and 1/4 teaspoon of the pepper and mix well.
  4. Spread the vegetables in an even layer.
  5. Sprinkle with the vermouth.
  6. Roast the vegetables in the oven for 35 minutes.
  7. Add the Parmesan and herbs and mix well.
  8. Continue roasting until the vegetables are well browned, about 10 minutes longer.
  9. Put in a warm spot and cover loosely with aluminum foil.
  10. Heat the broiler.
  11. Coat the steak with the remaining 2 tablespoons oil.
  12. Sprinkle the steak with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper and dot with the butter.
  13. Broil the steak for 5 minutes.
  14. Turn the meat and cook to your taste, about 5 minutes longer for medium-rare.
  15. Transfer to a carving board and leave to rest in a warm spot for about 5 minutes.
  16. Cut into thin diagonal slices and serve with the roasted vegetables.
