Chiles Con Papas
- 1 tablespoon vegetable oil
- 2 medium onions, chopped
- 2 fresh green hatch chilies
- 4 large potatoes, peeled and diced
- boiling water
- salt
- Saute onions until tender.
- Add green chiles.
- Add diced potatoes.
- Mix thoroughly.
- Add boiling water to cover, cook down until potatoes are tender and creamy.
- Add salt to taste.
- Cooked potatoes my be used in place of raw potatoes, but only add a small amount of water to the mixture.
