Asian Baked Chicken for One (Or More!)

  1. Preheat oven to 350F.
  2. Put the chicken in a baking dish; pour over the soy sauce and vinegar, and then top with the vegetables.
  3. Bake for about 40 minutes or until the chicken is cooked through and no longer pink in the middle.
  4. Cover with foil half-way through the cooking time.
