Asian Baked Chicken for One (Or More!)
- 1 skinless chicken breast
- 12 tablespoon soy sauce
- 14 tablespoon rice vinegar
- 12 onion, sliced
- 12 bell pepper, sliced
- 1 small carrot, sliced
- 2 ounces baby corn
- 5 water chestnuts, sliced
- Preheat oven to 350F.
- Put the chicken in a baking dish; pour over the soy sauce and vinegar, and then top with the vegetables.
- Bake for about 40 minutes or until the chicken is cooked through and no longer pink in the middle.
- Cover with foil half-way through the cooking time.
