Baked Chicken Italiano Recipe
- 4 x chicken breast halves -- boneless skinless
- 1/4 c. extra virgin olive oil
- 1 c. fine breadcrumbs
- 1/2 c. Italian salad dressing
- 2 c. marinara sauce
- 1/2 c. sliced Mozzarella cheese
- 1/3 c. minced tomatoes
- 1 1/2 tsp dry Italian seasoning Or possibly 3 tbsp fresh basil or possibly oregano - chopped Parmesan cheese
- Preheat oven to 350 degrees F. Heat extra virgin olive oil in large frying pan.
- Dip chicken in salad dressing, then in bread crumbs.
- Brown in oil.
- Transfer to shallow baking dish.
- Spoon marinara sauce over chicken.
- Top with sliced Mozzarella, then minced tomato.
- Sprinkle with herbs and a generous shake of Parmesan cheese.
- Bake for 45 min.
- If tomatoes begin to burn, cover loosely with foil.
- Makes 4 Servings
