Spinach Rice
- 1 vegetable bouillon cube
- 1 1/2 cups brown rice (see note)
- 2 tablespoons nonhydrogenated margarine
- One 10-ounce package frozen chopped spinach, thawed
- 1 to 2 scallions, thinly sliced
- Salt and freshly ground pepper to taste
- Bring 4 cups water to a simmer with the bouillon cube in a medium saucepan.
- Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes.
- Stir in the remaining ingredients and continue to cook just until everything is heated through.
- Serve at once.
