Stuffed Baked Apples

  1. Preheat oven to 350 degrees.
  2. Cut the tops off the apples, reserving the tops for use later.
  3. Peel and core the apples, leaving them whole.
  4. Cut a small slice off the bottom, if needed, so they will sit evenly.
  5. In a medium bowl, mix the apricots, cranberries, walnuts, ground cinnamon and brown sugar.
  6. Mix in the softened butter.
  7. Divide the fruit mixture between the apples.
  8. You can let some of the stuffing overflow onto the top.
  9. Put a cinnamon stick in the top of the apple that you cut off, letting a small part of each one stick out the top to look like a stem.
  10. Push the bottom part down into the stuffed apple to make a lid over the fruit.
  11. (If the cinnamon sticks are too long, break them off.)
  12. Place the apples in a shallow dish and pour the juice over them.
  13. Bake for 55 minutes, basting the apples with the juice every 10 minutes.
  14. The apples are done when they are soft and shiny.
  15. Serve warm or cool.
