South African Murg Poeding (Marrow Pudding)

  1. Preheat an oven to 350 degrees F (175 degrees C). Grease an 8-inch baking pan.
  2. Beat egg and 1/2 cup sugar together in a bowl. Mix in flour, vinegar, apricot jam, baking powder, baking soda, and salt. Add milk gradually, mixing well. Pour into the prepared baking dish.
  3. Bake in the preheated oven until set, about 45 minutes.
  4. Dissolve 1/2 cup sugar in boiling water. Add evaporated milk, melted butter, and vanilla extract. Mix well; pour over baked pudding. Wait until sauce is absorbed before serving, about 5 minutes.
