No-Fuss VELVEETA Potato Chowder
- 2 cups water
- 3 lb. red potatoes (about 9), peeled, chopped
- 1 carrot, chopped Target 2 lb For $3.00 thru 02/06
- 1/4 cup butter
- 1/4 cup flour
- 1/4 tsp. black pepper
- 1 can (14.5 oz.) vegetable broth
- 1/2 lb. (8 oz.) Sharp Cheddar VELVEETA, cut into 1/2-inch cubes
- Microwave water in covered 2-qt.
- microwaveable dish on HIGH 5 min.
- Add potatoes and carrots; microwave, uncovered, 15 min.
- Meanwhile, melt butter in large saucepan on medium heat.
- Stir in flour and pepper; cook and stir 3 min.
- or until mixture forms a thick paste.
- Gradually stir in broth; cook 5 min.
- or until thickened, stirring frequently.
- Add VELVEETA; cook and stir 3 min.
- or until melted.
- Mash vegetables slightly.
- Add to saucepan; stir.
- Cook 3 min.
- or until heated through, stirring constantly.
