Crockpot Tortilla Soup
- 1 lb shredded cooked chicken
- 4 tomatoes
- 14 cup enchilada sauce
- 1 medium onion, chopped
- 1 (4 ounce) canchpped green chili peppers
- 1 jalapeno, diced
- 2 garlic cloves, minced
- 2 (48 ounce) boxes chicken broth
- 1 (15 ounce) can black beans, rinsed
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons fresh cilantro
- place all ingredients in crockpot.
- Mix well, turn on high for 3 hours or low for 5-8 hours.
- Garnish with chunks of avocado, tortilla chips, shredded cheese and/or sour cream.
