Peppermint Brownies

  1. Heat oven to 325 degrees fahrenheit.
  2. Butter and flour a 13 X 9 inch glass baking dish.
  3. Cream butter with sugar until light and fluffy.
  4. Beat in vanilla and peppermint extracts.
  5. Add eggs and beat until well blended.
  6. Stir in flour, cocoa, baking powder and salt; blend well.
  7. Reserve 2 cups batter.
  8. Spread remaining batter in prepared pan.
  9. Arrange the dinner mints 1/2 inch apart in single layer over batter.
  10. Spread reserved 2 cups batter over the mints.
  11. Bake 45 to 50 minutes or until brownies begin to pull away from sides of pan.
  12. Cool completely in pan.
  13. Cut into squares.
