Hummus Bi Tahini
- 2 cups cooked garbanzos (chick-peas; pages 19-21), drained
- 3 garlic cloves, minced
- 1/4 cup sesame seed paste (tahini)
- 6 tablespoons freshly squeezed lemon juice
- 1/4 cup freshly minced parsley
- Pinch of salt
- In a food processor or blender, combine the garbanzos, garlic, sesame paste, lemon juice, parsley, and salt.
- Process until smooth.
- Taste and adjust seasoning.
