Peas Tossed in Butter With Fresh Mint
- 25 g butter
- chicken stock
- 500 g peas
- 2 sprigs mint
- Add the butter to a pan with a drop of water (approx 2-3 tbsp) and throw in a little chicken stock.
- Dissolve the mixture on a high heat to create an emulsion (a liquid dispersed in another liquid).
- Once dissolved, add the peas and reduce for 1-2 minutes.
- This will help to concentrate the liquid and the flavour.
- Just before serving, add the fresh herbs and serve.
