Green Beans with Lemon and Garlic

  1. In 12-inch skillet, heat 1 inch water and 1 teaspoon salt to boiling over high heat.
  2. Add green beans; heat to boiling.
  3. Reduce heat to low; simmer, uncovered, 5 to 10 minutes, until beans are tender-crisp; drain.
  4. Wipe skillet dry.
  5. In same skillet, heat oil and garlic 1 minute over medium heat.
  6. Add lemon peel, pepper, and 1/2 teaspoon salt, and cook 1 minute longer.
  7. Return beans to skillet and cook until beans are hot, about 5 minutes.
