Sour Crudites

  1. Combine the celery, carrot, cauliflower, and onion in a colander.
  2. Add the salt and massage into the vegetables.
  3. Let stand for 5 minutes, then rinse and place in a bowl.
  4. In a small saucepan, combine the vinegar, water, garlic, and chile and bring to a boil.
  5. Immediately remove from the heat and pour over the vegetables.
  6. Cover the bowl and refrigerate right away for a minimum of 1 houror as long as you can wait.
