Crunchy Curried Chicken Bites

  1. Dice chicken into 1/2 -inch cubes.
  2. Combine salt, pepper and spices.
  3. In a nonstick skillet, heat oil over medium heat; stir fry spice for 1 minute.
  4. Add chicken; cook, stirring, for about 5 minutes, or until no longer pink inside.
  5. Remove from skillet; let cool.
  6. (At this point, chicken can be covered and refrigerated for up to 24 hours.

  8. In a bowl, stir together chicken, yogurt, and mayonnaise.
