Ginger-Macadamia Nut Snowballs

  1. In a large bowl, cream butter and 3/4 c confectioners sugar until blended.
  2. Beat in lemon peel and lemon extract.
  3. Gradually beat in flour.
  4. Stir in nuts and ginger.
  5. Refrigerate for 1 hour or until easy to handle.
  6. Shape dough into 1" balls; place 2" apart on a parchment lined baking sheet.
  7. Bake at 350 for 14-16 minutes or until lightly browned.
  8. Roll warm cookies in remaining confectioners sugar.
  9. Cool on wire rack.
  10. When cooled roll cookies in confectioners sugar again.
