Grandpa's Southern Green Bean Dinner Recipe
- 2-3 lbs. fresh green beans
- 1/2 pound bacon, diced
- 1 med. onion, diced
- 2-3 potatoes, diced
- 1 lg. (32 ounce.) can chicken broth
- Sufficient water to keep liquid sufficient for cooking
- 1 tbsp. butter
- Salt and pepper to taste
- Saute/fry bacon and onion in butter till bacon is just beginning to brown - not crisp.
- Add in green beans and stir well for 3-4 min.
- Add in chicken broth and sufficient water to cover green beans.
- Simmer gently till green beans begin to feel tender.
- Add in potatoes and salt and pepper.
- Stir gently several times, keep sufficient liquid in pot to cook potatoes.
- Stop cooking when potatoes are tender.
- Check seasonings.
- This is good served with sliced tomatoes and corn on the cob.
