Salsa Chicken With Rice Recipe

  1. Heat butter and pepper in frying pan.
  2. Trim cutlets and saute/fry in pan, turning occasionally till cooked throughout (10-15 min).
  3. Pour salsa into pan on top of chicken.
  4. Continue to simmer for about 15-20 min with a cover.
  5. While chicken is simmering, prepare rice.
  6. Serve chicken on a bed of rice.
  7. Top with lowfat sour cream and olives.
  8. Serves 3-4.
