Smoked Salmon and Avocado Salad
- 12 avocado
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- 1 cup smoked salmon, flaked
- 2 tablespoons celery, chopped
- 2 tablespoons onions, chopped
- 1 teaspoon fresh dill, chopped
- 2 large lettuce leaves, intact
- salt and pepper, to taste
- Mash the avocado with the olive oil and mustard in a bowl.
- Blend well.
- Add the salmon, celery, onions and dill.
- Season with salt and pepper.
- Mix well.
- Serve wrapped in the lettuce leaves.
