Banana Breakfast Muffins Recipe
- 2 lrg Mashed bananas
- 1/3 c. Brown sugar
- 1 c. Buttermilk
- 1 x Egg
- 1 1/2 tsp Vanilla
- 1 c. Flour
- 1 c. Whole-wheat flour
- 3/4 c. Natural bran
- 1 tsp Baking pwdr
- 1/4 tsp Baking soda
- 1/2 tsp Salt
- 1/2 c. Nuts, coarsely minced
- 1.
- In med bowl, beat together first six (wet) ingredients.
- 2.
- In large bowl, stir together remaining ingredients.
- Add in banana mix and stir to moisten.
- 3.
- Spoon into 12 greased muffin c. and bake at 425F for 14 mins till tester comes clean.
- My notes: I left out nuts.
- Make sure bananas are very ripe and large!
- If in doubt use three, it cannot hurt.
- Truly great for breakfast and a good source of fibre.
